Full Spectrum: Jairo Arcila Lychee

Our newest Full Spectrum offering features the explosive flavors coffee producers are exploring through unique processing methods.

When we tasted samples of this offering from producer Jairo Arcila, we were thrilled by the results of this lychee and wine yeast co-fermentation coffee.  

Arcila is a third generation coffee grower in Quindío, who with the help of his sons, is producing exotic varieties with unique flavor profiles.

This Castillo coffee was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage, lychee and wine yeast were added. The cherries were then pulped and placed to dry on raised beds until the ideal moisture content was achieved.
